A few weeks ago when I posted my Sugar-Free / Paleo Edible Pumpkin Protein Cookie Dough, I asked if there were any other paleo recipes people wanted to see, and one of my lovely followers suggested Pumpkin Fudge! If you’re reading this, thank you for the suggestion, Jo! 🙂
Obviously I hopped right on that suggestion because A) who doesn’t love fudge and B) I’m very into the no-bake recipes right now. I’m not sure if I’m just being lazy or if it’s still too hot here in San Diego, but I have no interest in turning on my oven.
Soooo…bring on the no-bake recipes! And the one-bowl recipes. I’m all about minimal equipment around here, ya know? I really appreciate any recipe where I can just throw everything in a bowl, and I’m done.
This Pumpkin Fudge is the perfect hassle-free treat to keep on hands at all time. It stores in the fridge or the freezer for a looong time, so it’s the perfect recipe to store as backup for whenever you have a sweet tooth!
And the best part is…. there’s no sugar! No sugar or sweeteners needed. You know I love sweetener-free desserts! Whole foods can be very sweet naturally if you know how to highlight the flavors, so I prefer to leave sugar and sweeteners out of recipes when I can. That includes sweeteners like stevia, monkfruit, and xylitol, which can cause digestive upset for many people.
ÂSince this recipe contains no sugar or sweeteners, it’s also the perfect treat to include on a low-carb or ketogenic diet if you have a sweet tooth! These fudge squares are filled with plenty of healthy fats to balance your blood sugar and keep you satiated. They don’t contain chocolate, but they’re the texture of fudge. That makes them fudge, right?
ÂNot only are these keto-friendly, but they’re also paleo and vegan! Make these for anyone and they’ll enjoy them! Move over Pumpkin Spice Latte… Pumpkin Spice Fudge is in town.
ÂThese Pumpkin Fudge squares taste like frozen pumpkin pie without crust. Literally. You’re going to be shocked. They are soooo delicious. And this is way easier than making pumpkin pie! If you’re not a crust person, then these will be your dream pumpkin pie replacement!
Never underestimate a sugar-free dessert. These are perfectly fudgey and chewy, rich and creamy, and truly a pumpkin-lover’s ideal treat! If you’re craving something sweet but don’t want to eat any extra sugar and don’t want to bake, give these a shot!
Sugar-Free Pumpkin Fudge (Paleo / Vegan / Keto)
Time: 10 minutes
Yield: 12 squares (depends on how big you cut them)
Ingredients:
- 1/2 cup pumpkin puree (NOT pumpkin pie filling – make sure you get canned pumpkin puree)
- 1/2 cup coconut butter
- 1/2 cup cashew butter
- 1/2 cup coconut oil
- 3 tsp vanilla
- 1/2 tsp sea salt
- 1.5 tsp pumpkin pie spice
- 1 tsp cinnamon
- 1/4-1/2 cup pecans
Instructions:
- Mix all ingredients together in a small saucepan over very low heat, just enough so the coconut butter and cashew butter melt. Stir well until everything is combined.
- Pour the mixture into a 9×5 loaf pan (line it beforehand if you’d like).
- Put the fudge in the fridge for about an hour, or until it’s hardened.
- Cut the fudge into squares however large you’d like. I like to cut them into 10-16 squares. They’re rich, so I like smaller squares.
- Enjoy! Store extras in the fridge or the freezer.
