Have you heard of MOFONGO?! Well, if not, now you have! Mofongo is a traditional Puerto Rican dish made from deep-fried plantains mashed and mixed with other ingredients. I’m sure you can imagine that mofongo isn’t usually the healthiest option out there – gotta watch out for anything deep-fried!
This recipe, however, is a paleo twist on the traditional dish, so you can have your fried plantains without the inflammatory oils! Instead of industrial seed oils that can cause inflammation in the body, good ole’ olive oil will do the trick in this recipe, and it makes the dish taste even more flavorful.
