Since recently increasing my carb intake, I’ve been having a lot of fun trying out new types of paleo starches and cooking them in different ways! Plantains are one of my favorite paleo starches, and they definitely don’t get enough love.
If you love bananas, you’ll love plantains! You can usually find the two in the same section at the grocery store, but the plantains have a thicker skin and are darker in color. Plantains are a great option if you’re looking for a dense, whole-food carbohydrate – sweet potatoes can get old if you have them all the time!
