Paleo Cauliflower Fake Oatmeal

Paleo Cauliflower Fake Oatmeal

I’ve been in a major breakfast rut recently. I’m obsessed with eggs. Have ’em every morning. Sometimes I toss in a smoothie or have dinner leftovers for breakfast, but 98% of the time it’s eggs. Having that many eggs, every day…let’s just say I needed to switch things up.

I looooove trying new recipes, especially when they seem kind of weird at first. I used to adore oatmeal, and I ate it every morning. (I’m a creature of habit, obviously.) Then stomach/health problems happened, and I switched over to eggs as my go-to breaky. I’l never turn down an omelette or a frittata, but honestly, sometimes I miss the warm, gooey deliciousness of a comforting bowl of oats. Especially when it’s nice and chilly outside. Or if it’s raining.

Finding breakfast alternatives can be difficult if you don’t eat gluten or dairy, but I was determined to find something to switch it up. So I did what any determined girl would do – I scoured through Pinterest for a few hours and stumbled across a fabulous, intriguing recipe for an oatmeal-like breakfast that wasn’t actually oatmeal. I gave it a shot and kind of became obsessed. Wanna know what it is?!

Cauliflower (fake) oatmeal!

When I found the recipe, I was so excited and wanted to try it right away. When I told my friend about it and got the “you’re really crazy” look, I realized that maybe this recipe wouldn’t sound that great to everyone. But I think it’s delicious! I’m a big fan of cauliflower rice in general, and I love that it can be totally transformed into a breakfast porridge. The coconut milk and spices mask the cauliflower taste, and hidden eggs provide that epic, gooey oatmeal texture.

This recipe satisfies all of oatmeal cravings while fitting in some veggies, protein, and healthy fats to start my day off right. BAM. You can easily customize the recipe to give it different flavors – add some fruit for pizzaz, some nuts for a crunch, some coconut because coconut is everything, some pumpkin and pumpkin spice… You get the idea. Mix it up!

If you’re interested at all, give it a shot! I’ve made this three times this week, and I’ll probably make it again tomorrow. It’s like a warm hug in a bowl! It’s pretty quick, it’s healthy, and there’s something really satisfying about eating a yummy meal that’s made from an unusual combination of ingredients.

Paleo Cauliflower Fake Oatmeal

Paleo Cauliflower Fake Oatmeal

Ingredients:

1-2 cups cauliflower rice (I prefer to do 2 cups to give it more texture, but sometimes just do it with 1!)

1 cup coconut milk (or any other nut milk – coconut milk will make it the thickest)

2 eggs

2 tsp cinnamon

2 tsp nutmeg

1 tsp Celtic Sea Salt

1 tbsp nut butter (optional — but why would you ever turn down nut butter)

1 tbsp ground Flaxseed

1 tbsp Hemp seeds

Pecans/Walnuts to taste

1 tsp Vanilla

Optional:

1 tbsp maple syrup for sweetness

Directions:

  1. Cut a head of cauliflower into florets. Put the florets in the food processor and pulse until you get a rice-like consistency. (If you’re usually pressed for time in the morning, I recommend doing this the night before and storing the cauliflower in a sealed container until you’re ready to use it!) Or go to Trader Joe’s and snag some cauliflower rice, if you’re one of the lucky few who can get their hands on it!
  2. Put the cauliflower rice and coconut milk in a sauce pan and place over medium heat. Allow the mixture to reach a boil and then let it simmer until the cauliflower rice is tender (takes me about 12 minutes).
  3. Once the cauliflower rice is cooked, mix in the salt, cinnamon, nutmeg, and any other spices of your choosing. Now’s the time to add in the vanilla and/or Stevia if you want a sweeter taste! Keep on mixing!
  4. Crack your eggs and pour them into the mixture. Whisk rapidly for about two minutes.
  5. Add in your nut butter, hemp seeds, flax seeds, and some pecans. Stir it all together.
  6. Transfer into a bowl, and top off with a few walnuts or any other toppings of your choosing. Some shredded coconut would be divine.
  7. Enjoy!

Butterbeer Recipe

Butterbeer Recipe

If you’re a Harry Potter addict like me, or just obsessed with warm, delicious cups of goodness, then I’ve got a real treat for ya. I stumbled upon a great Butterbeer recipe on Pinterest last weekend, and with a few modifications, a miracle was born.

Unfortunately, I am everything but a fan of the “Butterbeer” at Harry Potter World. After being extremely excited to finally taste the magical drink I had been dreaming of for years, I was thoroughly disappointed when I tried my first mug of the beloved drink of the wizarding world. It was literally cream soda with foam on top. This recipe, however, is what Butterbeer is supposed to taste like – or at least a variation of it (it’s not as butterscotch-y as I imagined). This drink will warm your whole body from head to toe with its liquid-gold-deliciousness. If this isn’t the definition of divine, I don’t know what is. It’s perfect for a chilly winter day and ideal for curling up by the fire and having a Harry Potter movie marathon. Plus, there’s an allergy-friendly version!

Magical Butterbeer for Muggles

Regular Version:

1 Cup Full-Fat Milk

1 Tablespoon Butter

1 Tablespoon + 1 Teaspoon Brown Sugar

2 Teaspoons Vanilla Extract

2 Teaspoons Cinnamon

Dash of Nutmeg

1 Tablespoon French Vanilla Ice Cream

Whipped Cream

Butterscotch Sundae Syrup/ Caramel Syrup

Extra Dash of Cinnamon

Allergy-Friendly Alternative:

1 Cup Full Fat Coconut Milk

1 Tablespoon Earth Balance or Coconut Oil

1 Tablespoon + 1 Teaspoon Coconut Sugar

2 Teaspoons Vanilla Extract

2 Teaspoons Cinnamon

Dash of Nutmeg

1 Tablespoon So Delicious Dairy Free Almond Milk Vanilla Frozen Dessert

Coconut Milk Whipped Cream (1 Can Full Fat Coconut Milk, 1 Tablespoon Maple Syrup, 1 Teaspoon Vanilla)

1 Tablespoon Maple Syrup

Extra Dash of Cinnamon

Directions:

  1. In a small saucepan, heat the butter/Earth Balance/coconut oil and the sugar. Stir the mixture until it blends together and you see large bubbles on the surface.
  2. Slowly add the milk and continue stirring the mixture while on medium-high heat. Add the vanilla, cinnamon, and nutmeg until they are all incorporated.
  3. Finally, add the ice cream/frozen dessert, and continue to stir the mixture until everything is blended and the ice cream has melted.
  4. Turn off the heat and use a ladle to pour the Butterbeer into a festive mug. (It has to be festive! It will taste better if the mug is cute, I promise.)
  5. Add the whipped cream on top of the Butterbeer. Drizzle the butterscotch/caramel/or maple syrup on top of the whipped cream. Top it off with a dash of cinnamon and enjoy! Watch Harry Potter while drinking.

Directions for the Coconut Milk Whipped Cream:

  1. Refrigerate a can of coconut milk overnight.
  2. The next day, flip the can upside down, open it, pour out the liquid (you can save it for something else), and put the coconut cream from the bottom of the can into your mixing bowl.
  3. Beat the coconut cream, maple syrup, and vanilla until combined.
